Quinoa (pronounced “keen-wah”) is all the rage these days. People love the little superfood that could for a number of reasons, such as (1) its trendy (2) it is full of all kinds of nutrients and good for you things (3) it is delicious. Seriously. Quinoa has a nutty flavour and a great texture that lends well to replacing all your favourite bad-for-you rice dishes with great-for-you quinoa. Take this quinoa version of fried rice. It is a cinch to prepare, easily customizable based on what’s hanging out in your fridge, and very satisfying.

 1 cup quinoa
2 Tablespoons vegetable oil
½ package firm tofu, drained and patted dry with paper towel, then cut into ½ inch cubes
2 cloves garlic, minced
1 inch fresh ginger, peeled and minced
1 Tablespoon sesame oil
About 1 ½ cups assorted stir fry veggies (I used diced red pepper and celery here because that’s what I had on hand. I also like this with shelled edamame, grated carrot, or shredded cabbage. Do what  makes you feel good)
¼ cup light soy sauce
A couple dashes hot sauce or chili garlic sauce
2 eggs, beaten
3 green onions, chopped in ½ inch pieces

Directions:
(1)    Cook quinoa according to package directions. Fluff with a fork and set aside.
(2)    Heat vegetable oil in heavy bottom skillet over medium. Add tofu cubes and stir fry until golden, about 5 minutes. In last 2 minutes of cooking, add garlic and ginger and continue to cook, stirring. Remove tofu mixture to bowl.
(3)    Heat sesame oil in the same skillet over medium. Add veggies and stir fry until tender-crisp, about 3- 5 minutes.

    (4) Add reserved cooked quinoa to skillet and cook stirring for 1 minute, until combined. Add soy and hot sauce and stir.
    (5) Make a large well in the centre of the quinoa/veggie mixture. Pour beaten eggs until the well. Once eggs begin to set, begin to scramble them, stirring into the quinoa mixture as the eggs cook. The eggs will cook quickly in the hot pan.
    (6) Stir green onion and reserved tofu into quinoa mixture. Cook for 1 – 2 minutes to heat through, then serve.
